Falafel and the low FODMAP diet
Falafel consists of ground chickpeas or fava beans seasoned with herbs, spices, and sometimes onion before frying. Legumes naturally contain high levels of GOS that remain active even after soaking and cooking. Many restaurant recipes add raw onion or garlic powder to the bean mixture to enhance depth and spice. The combination of legume GOS and added alliums creates a highly concentrated FODMAP profile.
